Autumn Salad with Toasted Pecans

This salad combines many favorite flavors of Fall. As outside temperatures cool, meals tend to lean towards heavier, comfort-foods; and this bright, fresh salad adds balance to the table.

  • 1 cup Arugula or Baby Spinach 1/2 Avocado, diced
  • Handful of Craisins
  • Handful of crumbled Goat Cheese
  • ½ Pear or crisp apple, chopped
  • ¼ cup pecan halves, lightly toasted
  • 1 soft boiled egg

Dressing

  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Honey
  • 1 tsp Dijon Mustard
  • Salt and pepper to taste

Instructions

  1. Whisk together dressing ingredients in a small bowl and set aside.
  2. Toss salad ingredients and top with dressing.
